Scrub and peel potatoes.
Set oven rack to highest level.
(the recipe calls for you to…) Preheat oven to 450 degrees. But preheating an oven is a waste of energy, so as long as your oven is set to 450 degrees, you’re ok)
Coat baking sheet with non-stick cooking spray or if you’d rather lightly coat the pan with a bit of olive oil..go for it!.
Cut potatoes lengthwise.
In a large bowl, combine oil and spices.
Mix in cut potatoes into oil/spice mixture to coat.
Spread oil coated potatoes on a baking sheet and bake for 30 minutes on top rack of oven. Turn potatoes. Cook an additional 10-15 minutes, or until golden brown.
I like to serve them lightly sprinkled with a little malt vinegar. Yum Yum!
